BBQ Riblets & Corn Quesadillas



Ingredients :                                 * means optional

1 pack of riblets ( I use Morningstar farms hickory BBQ riblets)
1/4 cup shredded cheese - cheddar
1/4 cup shredded cheese - monterey
1 small can or corn
flour tortillias  9 - 10 inch
butter - for pan frying
*fat free sour cream
*black olives*lettuce

Cook riblets according to package and cut into bite size chunks.
Microwave corn in bowl and set next to prepared riblets.
In large skillet that is heated to medium, melt butter and place tortillia. Top half the tortillia with both kinds of shredded cheese, riblets, corn, *olives, and *lettuce. Fold and brown on both sides to a golden crisp. Cut into sections and add sour cream.

Crockpot *chicken* Quesadillas



Ingredients :                                *means optional

1 pack of taco seasoning
1 jar of taco sauce or salsa
1 box of Quorn chicken
Shredded cheese - any type you like
Flour tortillias  ~ 9 to 10 inch or  taco shells
Butter - for pan frying
*can of black beans
*bell pepper
*sour cream
*lettuce

Prepare the chicken according to the box and cut into chunks.
Place black beans, chicken, pepper, taco seasoning and taco sauce into crock pot  and cook on medium for 4-6 hours.

When done, fry butter in pan over medium heat and place tortillia. Fill one side (shown above) with crockpot mixture and cover with shredded cheese. Fold over and brown on both sides. Remove from pan and  cut into 4 sections. Dollop sour cream and enjoy!


Apple Raisen Crunch with Cinnamon Crust




Ingredients :                     *means optional

6 Gala apples chopped up and 3 to chop up later in the recipe
1/2 to 3/4 cup of raisens - depending on taste
2 tablespoons of butter
1/4 cup of brown sugar
1/2 cup of water
1/4 cup of walnuts
Cinnamon rolls - 10 count prefered
*cinnamon

Mix butter, brown sugar, raisens, apples, and walnuts in large bowland pour into crockpot. Pour water into crockpot and add *cinnamon. (I love cinnamon and add a generous amount!)
Cover and cook for 2-3 hours.

 When this time is up, chop up 3 more apples and add to the mixture in the crock pot for 1 hour. (Dont worry about room because the contents have melted into a syrupy texture and the new crispy pieces will fit well)

When this is done, you pull out the cinnamon rolls and place on wax paper. Using a rollin pin , flatten 6 of them  and place in pie pan you are going to use. Pour the fillin into the pie pan. The remaining cinnamon rolls can be used to form  the top of the pie. (I flatten one roll and use this for a center cut out piece such as the heart used in this one.) For a criss cross pattern, simply unroll the cinnamon roll and flatten strips to a thinner strip and lay them out. Do not over roll the cinnamon rolls as this causes them to shrink.

Bake at 350* for 7 to 10 minutes.

Serve with whipped cream or vanilla icecream and enjoy!

Cranberry BBQ Veggie Balls

                Cranberry BBQ Veggie Balls



Ingrediants :                        * means optional ingrediant

1-2 packages of veggie balls (I use Morningstar Farms)
1 can of jellied cranberry sauce
1 cup of your fave BBQ sauce
1/8 teaspoon of allspice
1 tablespoon of water
*one green pepper ~ chopped

Prepare Veggie balls according to box.
In a small to medium pot, mix cranberry sauce, bbq sauce, water, and allspice. Stir well and simmer 3-5 minutes. Add pepper.

Place now cooked veggie balls into crockpot and pour mixture from the pot over the veggie balls and gently mix. Cover and cook for 2 hours over low-medium heat.

I serve mine with white rice or mashed potatoes.

The sauce this is made with in the pot also serves as a wonderful substitution for gravy.

Cookie crusted brownies

                                    Cookie crusted brownies


These are made with sugar cookies that I dyed with red food coloring. Either cookie or brownie can be on top and they still look wonderful. They are great for Valentines Day, an Anniversarry, or just because you want to say "I love you."

 Ingrediants :                             * means optional ingrediant

1 box of your fave cookie mix
1 box of your fave brownie mix
*Frosting 
*food coloring for if you chose to use sugar cookies and want them to be a specific color for cutouts.

Other ingrediants are needed but vary depending on what mixes you chose to use. These mixes are used according to package.

 
Start by preheating oven to suggest brownie mix temp.
Spread aluminum foil over a cookie sheet.
Following box mix directions, make the cookies and spread them out along the entire cookie sheet and set to the side.

Following box mix directions, make the brownies and pour over the cookie dough. Make sure to gently spread the brownie mix over all the cookie but do NOT mix them :)
Cook for about 10-15 minutes.
Once brownies look set, remove from oven and cool.
Using a cookie cutter you can poke out any shape you want for family and friends for any occasion or just cut into squares!
